Description
DCN tumble chillers deliver higher food quality, better texture and superior taste. Large batches of food are rapidly chilled in flexible plastic casings to below 4°C (40°F), extending refrigerated shelf life by up to 45 days.
How it works
After cooking, the bagged product is immersed in chilled water while the drum rotates, tumbling the bags and massaging the product to cool it completely with minimal product damage. Approximate cooling times are 45 minutes for thin-viscosity products and 90 minutes for thick-viscosity products.
An easy-to-use HMI screen with temperature display reduces operator error, and cooling times and temperatures are fully logged by a virtual chart recorder for batch traceability. Recycling surge tanks save and reuse chilled water, conserving resources and reducing costs.
DCN tumble chillers are part of the DCN Cook-Chill System.
