Description
The DCN Cook-Chill System is an industry benchmark, used by food companies worldwide to produce high-quality meals with a safe, extended shelf life.
Developed as a lower-cost alternative to traditional cook-and-serve methods, it retains the taste, texture and aroma of freshly prepared food, which can be produced in large batches up to 45 days in advance.
How it works
Safe extended storage depends on chilling the cooked product rapidly through the "danger zone" of 5–63°C to slow bacterial growth. Heating the food to a high temperature pasteurises it; rapid cooling then slows microbial spoilage. Quality, taste, texture and aroma are maintained through controlled refrigerated storage.
For producers of every size
Cook-chill systems are built for small and large producers alike, from foodservice operators such as cafés and restaurants to manufacturers supplying supermarkets.
